Khandeshi Kadhi And Phunke / Khandeshi Spicy Buttermilk with Steamed Lentils Dumplings






Khandeshi Kadhi and Phunke (Steamed Dumplings made up of lentils) 

My today's recipe is Khandeshi Cuisine's Specialty and it is my all time personal favorite since my childhood as my grandma and my mom used to make it several times as everybody in house used to  love it.My lot childhood memories are associated with this as on every cold winder days my grandma used to make it and me and my cousins were used to die 😀 when there was competition among us who will eat it as fast as possible.😋 The specialty of this dish is its healthiness as it is made up from lentils so it becomes protein rich meal as lentils are good source of protein.










Ingredients:- For Phunke/Dumplings

1. 3 cups mixed dal (i used Toor dal + chana dal + moong dal + chavali (can take whole or dal))
2. Handful of coriander
3. 2 and 1/2 tsp Green chilies paste (3 to 4 chilies)+garlic (5 to 6 pods)+Ginger (1/2 inch piece) (can adjust as per spiciness u like)
4. 1/4 tsp turmeric 
5. Salt (As per taste) 
6. 1 cup finely chopped onion
7.1/2 tsp jeera/cumin seeds 

Recipe:-

1. Soak all dals for 5 to 6 hours.
2.once dal is soaked remove all water and put dal in grinder along with green chili+ginger+garlic and    grind until you will gets coarse consistency (Don't grind very finely).
3.Now in big bowl add grind dal mixture with finely chopped onion, corinder,salt(as per taste),turmeric, jeera  and mix well everything.
4.Place steamer on gas with water and take steamer plate and grease it with little oil.Now make equal sized balls out of dal mixture and place it in.now closed the steamer lid and steam it for 10 to 15 mins. (Tip :- If u r not sure or making for 1st time you can check in the middle too for that prick tooth pick or knife, if it comes clean means its done if not keep for some more time)
5. Once cooked Serve hot with hot Kadhi/ Spicy Buttermilk.(Check recipe below) 


Ingredients:- For Kadhi/Spicy Buttermilk 

1.  2 to 3 cups sour curd 
2.  1 and 1/2 tsp besan/gram flour
3.  Seasonings 1/4 tsp mustard seed+1/4 tsp jeera+ pinch of hing+1 green chili+small piece of ginger + 3 to 4 garlic pods + 1/5 tsp fenugreek seeds, fresh curry leaves (5 to 6), 1 to 2 crushed dagad phool/black stone flower,1 tsp ghee, salt, sugar
4.  Handful Coriander chopped
5.  2 to 3 cups water

Recipe:-

1. In big bowl whisk curd and add water till get smooth buttermilk,now add besan/gram flour and remove all lumps.
2. Now in pan add ghee once hot add seasoning ingredients mustard seed + jeera/Cumin seeds +hing + fenugreek seeds + green chilies paste (mixed with ginger and garlic),curry leaves,crushed dagad phool/black stone flower,once saute add buttermilk and besan mixture.
3.Now add salt,sugar,coriander and boil it for 5 to 10 mins.
4.Once boiled Serve Hot Kadhi with Hot Phunake/Dumplings and Enjoy your protein rich meal. 

Tip:- This is ideal meal option for brunch,Lunch,Dinner.
