Khandesh region(North-Western Part of Maharashtra) is famous for its food traditions.There are many dishes n recipes in this cuisine are different and famous for its taste and preparation style.My this recipe also belong to same region where i have grown up and i have tried and tasted all the recipes since my childhood.

As the rainy season is about to finish and winter is coming in my part of world so this is very very special winter food specially made for parties held at farm houses with the gatherings of friends,families and relatives to unite and to enjoy beautiful weather and to welcome winter of course.So Happy Winter All 




My this recipe of Vangyache Bharit (Marathi Name for Baingan Bharta) is very simple yet tasty and traditional of course.This is traditionally made at my home town for years and years and speciality is the eggplants/Brinjals used for this are very unique and planted for the purpose of bharta /Bharit only.They are available in the market during winter only. 





Preparations

Follow these steps before beginning of cooking.

1. Wash Eggplants and apply oil on outer skin of it and flame roast it on gas stove (You can also roast it on BBQ too) as shown in pic until it is cooks properly from all sides.

2.Once eggplants are cooked and cooled completly,peel the black smoky skin out of it and seperate the eggplant pulp from it and mash it with masher and keep aside the mashed pulp,and collect all the oil too which eggplant will release and add it to bharit/bharta in the end or in between cooking. 



Ingredients:-

1.  3 to 4 tsp cooking oil
2.  Chopped Onion
3.  Chopped Fresh Coriander
4.  Chopped Dry Coconut
5.  Roasted Peanuts
6.  Roasted Greenchillies+ Garlic Paste
7.  Salt to Taste
8.  1 tbsp Jeera/Cumin seeds
9.  1 tsp turmeric powder





Method to Prepare 

1.Heat oil in kadhai/Pan/Wok

2.Add jeera,green chillies and garlic paste and saute well.

3.Add chopped onion and let it cook well until it becomes translucent 

4.Now add peanuts and coconut and saute well.

5.Add mashed eggplants and mix well and let it cook well.

6.Add chopped spring onion and mix it well.

7.Then add salt and coriander and mix well and cover and cook for 4 to 5 mins on slow flame.

8. Now Serve hot with hot poori's, slices of raw onion and lemon wedges.
