It was raining outside in my part of world and i was craving for something spicy and authentic food from my native place so decided to make "Shev/sev Bhaji".My today's recipe is again a specialty of "Khandeshi Cuisine". A super spicy hot gravy/curry served with shev/sev called as Shev bhaji.This quintessential recipe of shev bhaji can be served with chapati or jowar bhakri. Mostly it is prepared at summer time when there are less vegetables available in the market. Shev/sev used in this recipe is specially made for this "Shev bhaji" purpose which we get only in khandesh which is also called as turkhati shev/sev but you can use any thick spicy shev/sev available in your place.

Ingredients :-
1.1 medium onion
2. 2 to 3 tsp dry coconut
3.1 tsp or as per taste garam masala (i used "Khandeshi Garam Masala")
4. Handful of fresh coriander
5. 1 tsp red chili powder (Or As per taste/Spiciness preferred)
6.2 to 3 dry kashmiri red chili
7.1 tsp Coriander+Cumin Powder
8. 1 small piece ginger
9. 4 to 5 garlic cloves
10.Salt as per taste
11.2 tsp oil
12.2 cups thick Shev/sev
13.Lemon wedge(for serving)
14.Chopped onion(for serving)
15.Cut tomato (for serving)
16.1/4 tsp turmeric
17.1 tbsp khas khas/poppy seeds
18.5 to 6 cashew nuts
Recipe:-
1.In pan add chopped onion and fry with little oil until brown in color then remove from pan and put in grinder,now dry roast coconut with dry red chili in the same pan and once done add to same grinder.Now dry roast khas khas/poppy seeds and add to grinder along with ginger,garlic,coriander+ cumin powder,cashew nuts,garam masala and paste it with little water as required.
2.In pan add oil once hot add red chili powder,grinded masala paste,turmeric and saute for a while,once done add water as required and consistency as prefer.Add salt and fresh coriander to garnish on top of it.
How to Serve:-⬇
Serve hot Rassa in big bowl,add some shev on top of it along with coriander,chopped onion,tomato wedges,lemon on sides of it with chapati or jowar bhakri and masala tak/buttermilk/chas to overcome the spiciness.
