Amrakhand or Mango Shrikhand is very Quintessential in Maharashtrian Cuisine in summer as well as all the year for festivals. But Specially Amrakhand is much enjoyed during summers in India as there is mango season all over and also can be enjoyed as Fresh summer dessert to bit that summer heat.This is most simplest as well as quick recipe that i learnt from my grandma,But this time made by using greek style yogurt.if it not available can use normal yogurt/curd.Homemade yogurt is always best to avoid preservatives. Basically Regular curd/yogurt is used to prepare hung curd then add sugar,dry-fruits,mango pulp/puree.Yes its that Simple...😛😛  yummm..








Hung curd can be prepared by hanging curd into pure muslin cloth for 4 to 5 hours or more if you like thick shrikhand. Here i used Greek yogurt as i wanted quick version of aamrakhand. For mango pulp i used Alphonso mango here in my recipe which are more sweet in taste as we can avoid sugar quantity.you can use any variety of mango which is easily available.




This summer dessert can be eaten with puri's or paratha or just as like smoothie which children can enjoy.Here i have not used any additional color or flavors as mangoes were so perfectly ripe and sweet enough so that i avoid adding additional sugar.   



For Garnishing this creamy,silky yogurt based dessert i have used pistachios,saffron,chironji,to enhance its richness and nutrition values.😛😛




How to Prepare:-

Ingredients:-

2 cups Greek/Normal yogurt
2 cups mango pulp/cubes 
Handful Dry-fruits mix (as per choice)
Few Saffron Strands
3 to 4 tbsp sugar (Optional and based on sweetness of mango)
1 to 2 pinch cardamon powder


Method:-

For Making Hung curd 

In a big sized muslin cloth or any cotton cloth add curd and tie it properly and hang it for 4 to 5 hours or till all water comes out.(If using Greek yogurt it will take less time)

Now In blender add hung curd,mango cubes/pulp,sugar,cardamon powder and blend all until gets smooth and creamy in texture.

Add all blended mixture into bowl ,add dry-fruits along with saffron strands and refrigerate it to chill...😝😝  And that's it...yup  its done 😛😛

Serve when chilled 😂😂😂..Enjoy
