Salmon with Indian Spices and Guacamole
Salmon marinated with Indian spices and freshly prepared guacamole is a weekend dinner in my home when mostly i don't want to cook all that regular food on that weary days. So this salmon recipe helps me as healthy and soul satisfying dinner option for our exhausted weekend.I tried doing this salmon recipe with Indian fish curry masala/powder and turn out so amazing ๐๐
It takes hardly less than 30 mins to prepared
(if you have already keep salmon for marinating) and put together everything
with this one pot meal option. This is not only healthy but also quick
meal too just to gladdened our heart and soul mostly on whacked
days.
The lemon juice and olive oil helps to keep the fish moist yet juicy and that blend of spices makes it a winner.And in the meantime of the marination i prepared my favorite "guacamole" which goes very well with salmon.
Ingredients:-

2 Fillet of salmon with the skin
Lemon juice 2 to 4 tbsp
Pinch of Black pepper crushed
2 to 4 tbsp olive oil
Salt to taste
1 and 1/2 tbsp Fish curry powder/Masala (depend upon thickness of fish)
Handful of fresh coriander
3 to 4 medium garlic pods
1 tsp turmeric powder
Method:-

In blender add lemon juice, olive oil,salt,fish curry powder,turmeric powder,pepper,garlic pods and fresh chopped coriander and blend it coarsely.
Once done with the blended mixture take salmon fillet in bowl and apply all that blended mixture evenly to salmon fillet and keep it in zip lock bag for marination for 1 hour or more in refrigerator.
Preheat the oven 220°c for 10 to 15 mins.
(can also cook this salmon in pan with little olive oil on fry on both sides until it cooks)
Once done with marination line up the parchment paper in baking tray.
Place salmon fillet as skin on downside and bake for around 15 to 20 mins.This time may vary and depending upon thickness of salmon fillet.(Can check in middle too).
Once done serve immediately with guacamole or roasted vegetables of your choice. ๐๐
Guacamole is an avocado-based dip or
salad first created by the Aztecs in Mexico.This is having an extensive use
in modern Mexican cuisine, it has also become part of
international and American cuisine as a dip, condiment and salad ingredient.
Guacamole dip is traditionally made by
mashing ripe avocados and sea salt with a molcajete (mortar and pestle). Some recipes call for tomato, onion, garlic, lemon or lime juice, chili or cayenne pepper, cilantro or basil, jalapeno,
and/or additional seasonings.
Ingredients :- Guacamole

2 ripe avocado
2 medium tomato chopped
2 tbsp lemon juice
Handful of fresh coriander
salt to taste
crushed black pepper
1 chopped red onion
1 medium green chili chopped
2 tbsp olive oil
Method :- Guacamole

In a big bowl add avocado mash (cut and remove its flesh),squeeze lemon juice immediately (so that it won't turn black), add chopped onions, tomatoes, coriander, salt,green chilies, olive oil, pepper and mix well.
And refrigerate until serving.
