Singapore's Sizzling SATAY with Peanut Sauce
Satay is a dish of seasoned, skewered and grilled meat,
served with a sauce. Satay may
consist of diced or sliced chicken, goat, mutton, fish, other meats, or tofu (for vegetarians ). The more authentic
version uses skewers from the midrib of the coconut palm frond, although bamboo skewers are often used. These are grilled or barbecued over a wood or charcoal fire, then served
with spicy seasonings. However most often they are served in a combination
of soy and peanut sauce. Hence, peanut sauce is often called satay
sauce.
Satay originated on the Indonesian island of Java. It is available almost anywhere in Indonesia, where it has become a national dish. It is also popular in many other Southeast Asian countries, including Malaysia, Singapore, Brunei, Thailand, the Philippines, East Timor as well as in Suriname and the Netherlands, as Indonesia and Suriname are former Dutch colonies.
Chicken satay – grilled chicken skewers marinated with spices and served with peanut sauce. Easiest and BEST Chicken SATAY Served in Singapore,is a famous street food.Which is very hard to describe the taste in words as it tender juicy chicken smoky flavored meat mostly barbecued over a charcoal fire after a hours of marination (up-to 5 to 6 hours or overnight for best results) into spicy yet sugary marination which is full of balanced flavors.
Chicken SATAY these picture i have taken over a last weekend during my visit to Singapore's famous hawker center where Best and perfectly marinated ,grilled chicken satay is served with equally balanced flavors of exotic spices and served with the peanut sauce, with a raw cucumber and onion salad.Chicken satay is one of the most popular Asian appetizers and they are loved by almost everyone.

Ingredients
For Chicken Marination
- 1/2 kg skinless, boneless chicken,cut into 1/2 inch strips
- 1 tbsp lemongrass chopped
- 1 clove garlic, minced
- 2 teaspoons minced fresh ginger
- 1 tablespoon fish sauce (Optional)
- 2 teaspoons peanut oil (Or any cooking oil)
- 4 shallots or 1 medium onion
- 2 small red chilies
- 1 tbsp lemon juice
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- salt to taste
For Peanut sauce
- 2 teaspoons minced garlic
- 2 teaspoons peanut oil (Or any cooking oil)
- 2 teaspoons minced fresh ginger root
- 2 small red chilies
- 1/2 cup crunchy peanut butter
- 1 1/2 cups coconut milk
- 2 teaspoons brown sugar
- 2 teaspoons soy sauce
- 1 1/2 tablespoons fish sauce (Optional)
- 1 1/2 tablespoons lime juice
- Salt to taste
- 12 wooden skewers, soaked in water for 1 hour
How to make
Make the marinade by adding the lemongrass, shallots, garlic, chilies, ginger, turmeric powder, coriander powder, cumin powder, soy sauce, fish sauce, brown sugar/refined sugar, and oil(Any oil or peanut oil) in a food processor or grinder and grind it until we get smooth paste. Once done apply this paste to thoroughly cleaned pieces of chicken and keep marinating for 5 to 6 hour or overnight for best results and taste.
While the chicken is marinating, heat the peanut oil in a pan. Add in shallots, garlic, ginger, and fresh red chilies. Cook until the shallot begins to turn translucent.Stir in peanut butter, coconut milk, soy sauce, brown sugar, (Can also use normal refine sugar), 1 1/2 tablespoons fish sauce (Optional),and lime juice,salt(if using fish sauce take care while adding salt) until blended. Let it cook for 10 minutes or until sauce becomes little thick yet watery too, then remove from heat and keep aside.
Prepare an outdoor BBQ for medium heat.Thread marinated chicken pieces onto wooden skewers.(You can also prepare this at gas stove with iron mesh or any mesh if u have or grill it in grilled non stick pan).
Grill chicken skewers on preheated BBQ for about 4 to 5 minutes per sides or until chicken cooks thoroughly.
Serve with spicy,sweet yet crunchy peanut sauce.
