  This delicacy is from Maharashtra and Gujarat as well and known by different names like "SURULICHY VADYA" in Maharshtra and "KHANDVI" in Gujarat with slight difference in making style at some places.Purely made of gram flour as gram flour is widely used in both states in numerous delicacies in day to day cooking.And this is one of them a very very popular snacks you can find at almost all stores in Gujarat and if you have traveled to Gujarat by train there you can find many vendors selling this along with "patra" and Masala Chai/Tea as well.As your train suddenly starts to smell of these two delicacies fills  the entire train you can assume that you are shortly approaching in "GUJARAT". 😁   










Ingredients
  1. 1 cup gram flour
  2. 1 cup curd
  3. a pinch of asafoetida
  4. 1/4 tsp of lemon juice
  5. 1/4 tsp turmeric powder
  6. 2 tsp ginger-green chili paste
  7. salt to taste
  8. oil for greasing
For tempering:- 2 tsp oil, 1 tsp mustard seeds, 1 tsp sesame seeds,1/4 tsp asafoetida

For The Garnish :- 
2 tbsp freshly grated coconut,1 tbsp finely chopped coriander
How To Prepare 
1.Grease thalis/plates with oil and keep aside.


  2.Make thick buttermilk with the curd/yogurt and 1½ cups of water in a big bowl and keep aside.

 3.Combine the besan/gram flour, buttermilk, asafoetida, lemon juice, turmeric powder, ginger-green chili paste and salt and pour in a non-stick pan and mix well using a whisk till no lumps forms to make a smooth batter.

 4.Switch on the flame and cook on a slow flame for few minutes/until it starts to thickens, while stirring continuously.

 5.Spread a spoonful of the batter on a greased thali/plate, wait for a few seconds and try to roll it up.

 6.If it doesn’t roll then cook for few more minutes and then check once more if it gets rolled perfectly.

 7.While it is still hot, pour small portions of the mixture on the all greased thalis and spread the mixture in a circular motion into a thin layer using a spatula.

 8.Allow them to cool for 5 to 10 minutes and roll them up tightly with/without spread of fresh coconut and coriander.

 9.Cut each roll into equal pieces/sizes and keep aside.

 10.For the tempering, heat the oil in a pan and add the mustard seeds,sesame seeds,asafoetida and pour this tempering on each rolls/vadi's thoroughly.

 11.Finish with generous garnish of coconut and coriander and serve.
